After a long interlude, Fiji is now producing coffee from the islands of Viti Levu and Vanua Levu. The varietals growing in Fiji are a mixture of Coffee Arabica and Coffee Liberica along with some Robusta as well. This coffee is essentially wild – not commercially cultivated, but growing wild and certified as organic by Organic Pasifika. The cup can be characterized with bright acidity, medium body, bakers chocolate and hints of tropical fruit and flowers. Only available as dark roast and best suited to use as espresso.
