Unroasted Honey Processed Coffee

A much rarer form of processing type than washed or natural coffees, 'honey' processing removes the skin and fruit from the coffee bean, but leaves some of the sticky mucilage remaining on the beans while they dry. Honey processed coffee is somewhere between washed and natural coffees, often having the sweetness and full body of natural coffees, coupled with the bright and well rounded notes of a washed coffee.
